Generic Tiramisu

This is a generic recipe for Tiramisu. You can use anything you like as the bottom layer of the cake, and put the following preparation on top of it. The traditional bottom layer is made of biscuit (“sponge fingers”) slightly soaked in coffee and Amaretto, but it can also be replaced with fruits (strawberries, cherries, bilberries (or blueberries)…)

Ingredients

  • 250g mascarpone
  • 2 eggs
  • 100g sugar
  • vanilla sugar

Separate the egg yolks from the whites. Mix the yolks with the sugar and the vanilla sugar until the preparation turns almost white. Then add the Mascarpone and mix until you get a smooth cream.

Whip the egg whites into a firm foam and incorportate the foam delicately to the cream.

Pour the mix over the bottom layer of your Tiramisu and put it into the refrigerator for a least 4 hours. You can optionnaly sprinkle it with bitter cocoa just before serving.
